Butter-shoyu egg fried rice

Time: 30 minutes
Serves: 8 people
Ingredients:
8 eggs
2 Tbsp olive oil
1 onion diced small
5 cups cooked rice, one day old (about 1.5 cups of uncooked rice)
Soya sauce
Butter
Black pepper
Method:
In a frying pan, add some oil and fry the onion on a medium heat for 15-20 minutes until soft and sweet.
In another frying pan, add the olive oil and eggs. Stir whilst the eggs are cooking to ensure they are scrambled well.
Once the eggs are nearly cooked, add the onion and rice to the pan. (You might have to set the eggs aside for a while if the onions are not yet cooked.) Stir and cook for another 5 minutes or so until the rice has warmed through.
Serve the rice into bowls and flavour with dashes of soya sauce, black pepper and a curl of butter. Mix to ensure the flavours are evenly distributed and enjoy!
